ZUPPA TOSCANA (TUSCAN SOUP)
Ingredients
1 lb Italian Pork Sausage (miild or hot — omit if vegetarian)
2 medium Sweet potatoes (yams, cubed)
1 can Cannelini beans (rinsed)
1 large Onion, chopped
1-2 cloves Garlic (minced or sliced)
1 carton Beef (or Vegetable) broth
1 tsp Salt
1/2 cup Kale, raw
1/2 cup Whipping cream
2 Tbsp Parmesan cheese (grated)
Instructions
1. Brown pork sausage first in a large saucepan.
2. Add onion and brown with sausage.
3. Add broth to sausage mixture.
4. Add chopped sweet potatoes into the pot.
5. Add rinsed cannelini beans.
6. Cook for 20-30 min until the potatoes are soft.
7. Add cream and kale and allow to wilt.
8. Top with some Parmesan cheese (grated) and with cooked Prosciutto (optional).
9. Enjoy! The sausage has enough spices in it, so it’s very tasty as is.
