COCONUT SNOWBALLS (No Bake/Keto/Diabetes Friendly)

Ingredients
1 1/2 cups unsweetened shredded coconut
1/2 cup Almond flour
1/4 cup Monk fruit (sugar substitute)
3 Tbsp Coconut oil (melted)
1/3 cup Water
Instructions
1. In a food processor (S blade) add all ingredients and process for 1-3 min until it forms a wet dough.
2. Scoop a small handful and roll into a ball (1 in or less). Dough makes about 16 miniballs.
3. Put balls on parchment paper inside a plastic freezer container.
4. Refrigerate or freeze to harden miniballs. Thaw when ready to eat.
5. You can decorate them with Nutella or Chocolate or Coconut shredded, but they really don’t need anything else!
They are purely delicious coconut balls, like homemade Almond Joy flavor.
