Lemon pie is a favorite dessert, but what about the carbs? here is a low carb version, and it is keto too! what could be better? It is truly a Keto Magic Lemon Meringue Pie.

LEMON FILLING
3 large, Egg yolks
0.50 cup, Lemon juice, raw (from 2 lemons)
2 cup, fluid whipping cream
1 Tbsp tapioca flour
1/4 cup Swerve Sweetener
CRUST
2 cup, Almond Flour
1/4 cup, Swerve granular sweetener
4 Tbsp Butter, melted
MERINGUE
3 egg whites, whipped into meringue
1/4 cup Swerve Sweetener
Instructions
1. For crust mix flour, sweetener, melted butter; press into bottom and sides of an 8-9” Pyrex pie dish sprayed with Pam
2. Bake at 325 F for 20 min or until crust is golden
3. In a saucepan, mix cream, sweetener, tapioca flour, egg yolks and heat on medium, stirring until thickened, add lemon juice
4. Pour into prebaked pie shell and bake at 335 F for 20 min until solidified
5. Top with meringue and bake at 350 F for 10 min until golden top
6. Allow cooling before serving
7. Refrigerate leftovers
