Lemon Artichokes

INGREDIENTS

1 large Lemon (juice of whole lemon)

2 cans Artichoke quarters

1/4 tsp Thyme (dried or fresh)

Dash Garlic powder, Onion powder, Black pepper

1/2 cup Whipping or Heavy cream

1/4 cup+ Parmesan cheese, grated

Dash Paprika (on top)

INSTRUCTIONS:

1. Squeeze the juice from one lemon, set aside.

2. Open two cans of artichokes, put in colander, rinse with water, squeeze water out by pressing on colander.

3. Dump artichokes into a sprayed (olive oil Pam) 8×8 glass dish (Pyrex).

4. Pour lemon juice all over the top.

5. Sprinkle thyme, black pepper, garlic powder and onion powder on top.

6. Pour cream on top of artichokes.

7. Cover top with grated parmesan cheese.

8. Sprinkle a dash of paprika on top.

9. Bake at 400 F for 30-40 min until top is golden.

10. Serve as a side dish or as a dip with bread, pita or tortilla chips.

11. Refrigerate leftovers, cover with a lid on top.

12. Enjoy this easy to make tasty side dish with any entree (goes with beef, chicken, vegetarian fare).
